For a wedding or pre-wedding shoot in Goa, Élan Films plans around the morning rather than the sunset: Fontainhas between 07:00 and 09:00, the quieter north beaches at low tide, the forts and the river islands. Goa is a west coast. Every beach faces the sunset, which is why every Goa shoot looks the same and why the ones that do not are shot in the morning, inland, or in Panaji.

The thing to understand about shooting in Goa is that the coastline runs north to south and faces west, so the sun sets into the sea everywhere. That is the postcard and it is also the trap: a backlit couple on a beach at 18:20 is the single most photographed frame in Indian wedding photography, and it will be in every album your guests have already seen.
The frames that look like Goa and not like a stock beach come from three other places — the Portuguese quarter in Panaji, the laterite forts, and the river islands. All three are morning locations, which is the opposite of what most couples plan for.

The locationsAnd how each one works
Shoot it between 07:00 and 09:00. It is a residential neighbourhood, not a set: people live behind those doors, the lanes are narrow enough that a crew blocks them, and by mid-morning the light goes flat and contrasty at the same time. Work quietly and move.
The flat sand at low tide gives you reflections you cannot get at Baga or Calangute, and the crowd is a tenth of the size. Check the tide chart before you commit to a time: at high tide the beach here is a strip and the frame disappears.
Cabo de Rama is the better of the two and the emptier. Both are exposed with no shade at all, so it is first hour or last hour or nothing. The cliff edges are genuinely dangerous in wind — a lehenga and a gust do not mix.
The ferry is free and runs constantly, and almost nobody shoots here. Green from June through to about January, gold after. This is where you go if you want frames nobody will recognise as Goa.
Two hours from the north Goa hotels, so it is a whole-day commitment. Calmer water and a tighter bay make it better for a couple who do not want a wide empty beach.
Convenient if you are staying in the strip. Also the most photographed stretch in the state. Use it for a quick evening block, not for the frames the album opens with.
Permission and rules
Beaches are public and there is no permission to shoot on them, but the moment you set up a rig, a reflector stand or a full crew you attract attention from shack owners and lifeguards. Small and mobile is the way to work a Goa beach.
Forts and church properties have their own rules and they are enforced unevenly, which is worse than enforced strictly — plan for the possibility of being moved on. Drone flying near Dabolim and Mopa is restricted airspace; that is not a local rule you can talk your way around.
November to March. The monsoon from June to September makes most beach and fort locations unworkable and the light is flat grey for weeks at a time. October is a gamble — the green is spectacular and the rain has not entirely finished.
Sunrise, almost always, and almost nobody does it. The beaches are empty, Fontainhas is quiet enough to actually work in, and you get soft light on the landward side that sunset cannot give you. Sunset in Goa is one crowded backlit frame that everybody already has.
Not for the beach itself. You do need to be sensible about shack property, and forts, churches and heritage buildings each have their own rules. Drone use near the airports is restricted airspace and is not something to improvise.
More than couples expect. At Ashwem and Mandrem the low-tide sand is wide and mirror-flat and gives you reflection frames; at high tide the same beach is a narrow strip against the treeline. We pick the hour from the tide chart, not just the sunset time.
